Snapper Bluefish

Snapper bluefish are young Pomatomus saltatrix—smaller, milder, and ideal for whole grilling or pan-frying without the full intensity of large choppers. Flesh is still oily and flavourful but more approachable for first-time bluefish cooks. Scale, gut, and cook on the bone. Summer piers and bays produce them in runs. Do not confuse with true Lutjanus snappers; the name is bluefish slang.
