Pomatomus saltatrix is bluefish—a voracious migratory predator with rich, darkish, oily flesh that shines when ultra-fresh and turns fishy fast if held poorly. Flavour is assertive and savoury; texture is moist and large-flaked. Grill, broil, or smoke the day you buy it. Remove the dark lateral line if too strong. Classic on the US East Coast and elsewhere as choppers and snappers (young). Not a mild whitefish—celebrate the oil.
