Atlantic bluefish is the US and European Atlantic market face of Pomatomus saltatrix—full-flavoured steaks and fillets for the grill, often cheaper than tuna but demanding speed from boat to fire. Young “snapper” bluefish are milder and pan-sized. Marinate briefly with acid and herbs, or smoke for pâté. Freeze only if vacuumed very fresh. A summer icon from New England to the Mid-Atlantic when the blitz is on.
