Thunnus thynnus is Atlantic bluefin tuna—the largest, fattiest bluefin complex member celebrated for otoro and chutoro in sushi and for spectacular roasts when ethically sourced. Flesh grades from deep red lean akami to pale marbled belly. Serve raw when sushi-grade, or sear the exterior only. Stocks have been severely overfished; buy only from verified well-managed or farmed-fattened legal programmes. Price and ethics are inseparable from the flavour.
