Elliott is a very late-season highbush cultivar extending fresh supply into autumn with firm, light-blue, highly acidic berries that sweeten after cold storage. Straight off the bush it can taste tart; after resting, balance improves for market. Valuable for stretching the northern harvest calendar. Good shipper; popular in regions needing late fruit. Use tart lots for baking and sauces; hold some for fresh once sugars catch up. Distinct from early Duke in season and acidity.
