Vigna unguiculata is the cowpea species—including black-eyed peas, crowders, and related field peas—with a beaky hilum and earthy, mineral flavour central to African, Southern US, and global cookery. Distinct from common beans botanically and in taste. Simmer for Hoppin’ John, stews, and salads; young pods of some types as yardlong beans. Species spans many market forms. Cook until creamy but intact.
