Consort is a Canadian black currant selected partly for white-pine blister rust contexts and cold hardiness—berries are aromatic and tart though often smaller or less sweet than top European juice cultivars. It helped keep Ribes culture alive where pine-rust rules restricted plantings. Flavour still reads unmistakably black currant when fully ripe. Home jam, jelly, and northern garden fruit more than industrial concentrate. Check local rules on Ribes planting near white pine. Harvest dark and soft-firm; underripe fruit is harsh. Pair with apples in jelly to stretch pectin and mild the resin note.
