A tier
Grass-finished bison spend their lives on pasture and forage without a final grain feedlot phase. The result is very lean meat with a clean, slightly sweet flavour and firmer texture than grain-finished bison. Yellow-tinged fat and darker lean are common; marbling is minimal by design. Best for cooks who want pure forage character: reverse-sear or grill steaks only to medium-rare or medium, baste roasts, and use mince with added fat or moisture for burgers. Overcooking grass-finished bison is the usual failure—there is little intramuscular fat to forgive a hot pan left too long.
