Beefalo is a cattle–bison hybrid developed for hardiness and a milder, often fatter carcass than pure bison. Legal and market definitions vary; meat may taste closer to beef, with more marbling and a less sharp “prairie” note. Some programmes use fixed hybrid percentages; others sell variable crosses under bison-adjacent branding. Cook more like beef than pure bison if marbling is evident—steaks tolerate a touch more doneness, and mince makes juicy burgers without added fat. Read labels carefully: beefalo is not pure bison, and pricing should reflect that. Useful when diners want red meat with some bison story but beef-like ease.
