Citrus bergamia is bergamot orange—pear-shaped yellow citrus grown chiefly in Calabria for peel oil that flavours Earl Grey tea, perfumes, and confectionery. Juice is sour and rarely drunk alone; the treasure is cold-pressed peel oil with floral-citrus complexity. Fruit looks like a yellow orange-lemon intermediate. Zest and oil for teas, cakes, and custom bitters; candy peel carefully. Whole fruit is a specialty ingredient more than a snack. Authentic Calabrian oil sets the quality bar.
