Several seed lines share the golden market class; all aim at smooth skin and round-to-oblong roots that roast to a honeyed, almost carrot-adjacent sweetness. Tops are edible but often smaller than red bunching beets. Roast, glaze, or cube into grain bowls where red bleed would muddy colours. Pickled golden beets stay bright in jars. Flavour still reads as beet—do not expect squash—so balance with acid and salt.
