Barrel-Aged Stout
Barrel-aged stout rests strong stout in spirit or wine barrels—bourbon, rum, or wine wood adding vanilla, oak, coconut, or tannin to roast chocolate and coffee malt. Alcohol is high; sweetness and wood character concentrate with age. A dessert and glaze beer: chocolate sauces, beef short ribs, ice cream affogato-style pours. Use spoonfuls; wood tannin and sugar burn if reduced carelessly. Not an everyday braising liquid.
