Wild ale covers beers fermented or aged with wild yeast and bacteria outside classic lambic geography—Brettanomyces, mixed cultures, barrel flora—yielding funk, acidity, and evolving aroma. Intensity ranges from lightly rustic to aggressively barnyard. Cook with restraint: late finishes for sauces, fruit pairings, and cheese boards. Heat knocks out volatile funk; a splash at the end preserves character. Not interchangeable with clean kettle sours.
