Gueuze (geuze) is a blend of young and aged lambics refermented in bottle for champagne-like carbonation and layered sour complexity. It is drier and more refined than many fruit lambics, with citrus, oak, and barnyard notes. Treat like fine sparkling wine in the kitchen: finish sauces off heat, dress seafood, or pair with strong cheese. Avoid boiling away the aromatic top notes that distinguish gueuze from simple kettle sour beer.
