Gose
Gose is a German sour wheat beer traditionally salted and spiced with coriander—tart, slightly saline, and refreshing. Originating around Goslar/Leipzig, it nearly vanished before craft revival. The salt-acid profile suits ceviche marinades, cucumber salads, and seafood stews; use as a seasoning liquid more than a bulk braising beer. Fruit goses add berry notes useful in desserts.
