Flanders Red

Flanders red is an oak-aged Belgian sour ale—deep red-brown, with balsamic, cherry, and vinegar-complex acidity balanced by malt sweetness. Lactobacillus and long wood ageing define the style more than hop bitterness. Powerful culinary acid: pan sauces for duck, shallot reductions, and cherry gastriques. A little goes far; boil gently to avoid purely acetic harshness. Distinct from bright kettle sours.
