Kellerbier

Kellerbier (and related zwickel) is unfiltered or lightly filtered lager served young—hazy, soft carbonation, fresh malt and hop aroma, and a rustic cellar character. It is closer to draught freshness than polished bottled pilsner. Drink young; in cooking use as a mild lager for stews and batters, knowing haze and yeast can add slight breadiness. Not the cleanest choice for crystal-clear sauces.
