Eisbock
Eisbock is a concentrated strong lager made by partially freezing a bock or doppelbock and removing ice, raising alcohol and flavour intensity. Colour is deep; sweetness and malt character are denser than the base beer, with a warming finish. Treat like a fortified wine in cookery—spoonfuls for glazes, dessert sauces, and rich braises. Heat softens volatile alcohol but leaves sugar; balance with salt and acid. Not an everyday cooking lager.
