Doppelbock
Doppelbock is a strong, malt-rich German lager—“liquid bread” in monastic lore—dark amber to brown with toffee, dark-bread, and dried-fruit notes and only modest hop bitterness. Alcohol is typically higher than standard bock; body is full and smooth from cold fermentation. Use sparingly in beef braises, onion gravy, and chocolate or caramel desserts where malt sweetness deepens the sauce. Reduce gently so residual sugar does not burn; a few spoonfuls often beat a full bottle in the pan.
