Bock
Bock is a stronger German lager family—from amber traditional bock to dark doppelbock—built on rich malt, higher alcohol, and low hop bitterness. Body is full; flavours run toward toffee, dark bread, and dried fruit without ale fruitiness. In cookery, bock stands in for sweet brown stock notes in beef and pork braises, or glazes where malt sugar helps browning. Use sparingly in reductions; alcohol and residual sweetness concentrate. Eisbock and very strong doppelbocks are dessert-leaning.
