Baltic Porter
Baltic porter is a strong, dark, cold-fermented porter tradition of the Baltic region—roast and chocolate notes with lager smoothness rather than warm ale fruitiness. Body is full; alcohol is higher than ordinary porter; finish can be slightly sweet or drying by brewery. Superb for beef pies, mushroom sauces, and chocolate desserts. Roast can turn ashy if boiled hard—add mid-cook or finish off heat. Stronger than everyday brown ale for cooking.
