Stout

Stout is a very dark ale family—dry Irish stout, oatmeal, milk, imperial, and pastry variants—built on heavily roasted barley or malt for coffee, cocoa, and sometimes sweetness. Body ranges from session-dry to dessert-thick. Dry stout steams shellfish and lightens chocolate cakes; imperial and milk stouts suit glazes and ice cream sauces. Bitterness and roast can turn ashy if boiled hard for too long—add late when possible.
