Scotch Ale
Scotch ale (wee heavy) is a strong Scottish malt-forward ale—deep amber to brown, caramel and toffee sweetness, low hop bitterness, and a warming finish. Body is rich; peat smoke is a modern myth more than a requirement. Use in beef pies, onion gravy, and dessert sauces where malt sweetness matters. Sugar concentrates when reduced—cut with stock and vinegar or mustard. Stronger than mild or ordinary bitter for cooking.
