Pale ale is a warm-fermented beer with amber-to-copper colour, balanced malt sweetness, and clear hop bitterness—British bitter traditions and American pale ale both sit under the name. Esters are moderate; hop character may be earthy (UK) or citrus-pine (US). Kitchen uses include cheddar soups, onion gravy, and beef stews where caramel malt helps browning. Hop bitterness concentrates when reduced; choose session-strength pale ales over aggressive IPAs for general cookery.
