Mild is a low-to-moderate strength English dark ale—soft caramel, light roast or chocolate, low hop bitterness, and a gentle finish designed for session drinking. Colour ranges from light amber to dark brown; body is light to medium. A forgiving cooking ale for stews, pies, and cheese sauces when stout would be too roast-heavy. Sweetness is modest; long reductions stay manageable compared with hoppy pales.
