IPA
IPA (India pale ale) is a hop-forward ale tradition—historically stronger and more bitter for export, now a craft spectrum from session IPA to hazy juice-bomb and bitter West Coast styles. Aroma oils and bitterness dominate; malt plays support. Cook with restraint: hop resins turn harsh in long boils. A splash in cheese sauce or marinade can work; heavy reduction rarely does. Pair fatty foods and sharp cheddar at the table rather than reducing double IPAs into syrup.
