Hulled barley is whole grain barley with only the inedible outer hull removed, bran and germ intact—chewier, browner, and more nutritious than pearl barley, needing longer simmering. Flavour is toasty and cereal-sweet; grains stay distinct in salads and pilafs. Sometimes called whole barley or pot barley when lightly processed. Soak or plan 45–60 minutes cooking. Do not expect the quick softness of heavily pearled grain. Best when you want true whole-grain barley character in soups and grain bowls.
