Blue Java (Ice Cream banana) is a hardy ABB-type dessert banana with silvery-blue green peel when unripe, yellowing at maturity, and soft white flesh that tastes remarkably like vanilla custard or ice cream when fully ripe. Texture is fluffy-creamy rather than dense Cavendish paste. Plants tolerate cooler subtropical edges better than many tropical bananas. A backyard legend in Hawaii, Florida, and similar climates; rarely a bulk export item. Eat fully soft for the ice-cream effect—underripe fruit is starchy and disappointing.
