Moso (Phyllostachys edulis) is the giant timber bamboo whose massive spring shoots dominate Chinese and Japanese commercial supply. Fat basal sections are meaty and mild after boiling; tips are more tender and prized. Moso plantations in Zhejiang, Fujian, and Japanese mountain belts set global fresh and canned standards. Peel multi-layered sheaths, boil until no raw bitterness remains, then cook as desired. Large shoots suit chunky braises; tips suit delicate soups. Moso is what most unlabeled “bamboo shoot” cans actually contain.
