Madake (Phyllostachys bambusoides) is a Japanese-prized bamboo whose shoots are often considered more refined and aromatic than bulk moso, with a cleaner sweetness when harvested young. Culms also serve craft and tool uses, so groves are dual-purpose. Shoots are typically smaller and more carefully selected for high cuisine. Feature in seasonal Japanese simmered dishes and clear broths where bamboo is a flavour note, not filler. Availability outside Japan is limited compared with moso cans. Treat with the same boil-first rule as other Phyllostachys shoots.
