Fruit
Bacon
A tier
Bacon is a medium green-skinned avocado with smooth thin skin, light mild flesh, and lower oil than Hass—early season fruit that fills the calendar before richer types peak. Flavour is clean and slightly grassy; texture can be watery if underripe or over-irrigated. The name confuses shoppers expecting smoky pork; it commemorates grower James Bacon. Useful for early guacamole and salads when Hass is expensive or scarce. Ripens without skin colour change. Not the first choice for maximum richness, but practical and cold-hardier than some Guatemalan types in marginal sites.
