Vegetable
Romanesco Artichoke
S tier
Romanesco artichokes (cimaroli and related Roman types) are prized round, green-violet Roman buds with meaty hearts and a tradition of being cooked whole, often Jewish-Roman deep-fried style or braised. Flavour is rich and refined; seasonality around Rome is a cultural event. Not the fractal brassica romanesco. Fry alla giudia if large and tender; braise gently otherwise. Protected and regional marketing may apply to true Roman product. Handle carefully—premium buds bruise.
