Salvelinus alpinus is Arctic char—a cold-water salmonid with orange-pink flesh, gentle oil, and a flavour between trout and salmon, often cleaner and more delicate than farmed Atlantic salmon. Wild Arctic populations and alpine lake forms are treasured; farmed char is now widely available. Roast, pan-sear, or cure cold. The flesh is softer than salmon—stop early. Pair with dill, horseradish, cucumber, or brown butter. A fine-dining and Nordic favourite when bright and not overfarmed in flavour.
