Eisenia bicyclis is arame kelp—thin, wiry dark strands after processing, mild-sweet marine flavour, softer and less assertive than hijiki. Japanese coastal species processed into the familiar dried arame. Soak until tender; dress as salad with sesame and soy; add to simmered dishes. Mild enough for first-time seaweed eaters. Species defines true arame.
