Herb
Wild Angelica
B tier
Wild angelica usually means Angelica sylvestris—a European native with purplish stems and softer culinary status than garden archangelica. Flavour is still aromatic-celery but often coarser; many foragers treat it cautiously and prefer cultivated archangelica for candy. Positive ID is mandatory among toxic umbellifers. Young shoots have been used regionally as wild pot herb; not the primary candying species. On menus, wild angelica should not imply archangelica confection quality. Prefer garden species for reliable sweets.
