Angelica archangelica is garden angelica—the tall biennial whose hollow green stems are classically candied for European baking, and whose leaves and seeds perfume liqueurs, jams, and fish dishes. Flavour is musky, celery-sweet, and resinous; potent raw leaf needs a light hand. Species-true archangelica is the confectioner’s angelica of Niort and Nordic traditions. Harvest young stems for candying before they toughen and hollow walls thicken. Seeds dry for gin-like botanicals. Do not confuse with toxic lookalike umbellifers when foraging.
