Seriola dumerili is greater amberjack—a powerful jack with firm, moderately oily flesh that takes grilling, sashimi (when appropriate), and robust pan sauces. Flavour is clean and slightly sweet when fish are bled and iced; large adults can be coarser. Cut steaks or loins, remove the dark bloodline if strong, and cook to medium for best moisture. Popular in Mediterranean and warm Atlantic cookery. Not as refined as farmed yellowtail hamachi, but excellent wild table fish when fresh.
