Almaco Jack
B tier
Almaco jack (Seriola rivoliana) is a deep-bodied amberjack relative with excellent firm flesh prized by some sushi and grill cooks—often compared favourably to greater amberjack for texture. High dorsal fin is the field mark. Bleed, ice, and cook as steaks or sashimi-grade only from proper handlers. Warm Atlantic and Pacific distribution. A high-quality jack for cooks who know their Seriola.
