Hopi Red Dye

Hopi red dye amaranth is grown primarily for deep red flower bracts used as traditional dye and for ornamental-edible interest; seed can be harvested as a dark grain but dye use is the cultural headline. Leaves may serve as cooked greens when young. As a grain variety entry, expect small darkish seed with standard amaranth cooking traits if food-grade seed is cleaned. Do not assume dye-plant seed lots are processed to food purity—source carefully. Flower colour is spectacular scarlet-burgundy.
