Golden Amaranth

Golden amaranth seed runs pale gold rather than pure white, with a slightly toastier impression when raw and a warm colour in porridges and puffed mixes. It is a market colour class prized for alegría and breakfast toppings that show a honeyed hue. Pop or simmer as other grain amaranths; golden lots can look premium in transparent packaging. Flavour differences versus white are subtle—freshness matters more than hue. Avoid confusion with golden ornamental leaf amaranths grown only for foliage.
