Amaranthus hypochondriacus is another core New World grain amaranth—often pale-seeded—with dense flower heads and excellent milling quality for flour and whole-seed cooking. Flavour is mild-nutty, slightly sweet when toasted, and less aggressively peppery than some dark seed lots. Preferred in some breeding programmes for seed yield and colour uniformity. Cooks like other grain amaranths: simmer, toast, or mill. Species labels on specialty bags help trace Andean versus Mexican-type supply chains when producers declare them.
