Thunnus alalunga is albacore—the longfin tuna with the lightest flesh of the major commercial tunas, moderate oil, and a clean mild flavour that defines “white tuna” in cans. Fresh loins are pale pink to beige, firm, and excellent seared or grilled. Temperate waters worldwide hold stocks. Sear rare to medium-rare, confit in oil, or rely on quality canned white tuna. Albacore is milder than yellowfin or skipjack; do not bury it under heavy spice. Fresh fish should smell clean and feel firm, never soft or rainbow-iridescent with age.
