Pacific albacore is Thunnus alalunga from North Pacific troll and pole fisheries—especially US West Coast and Canadian summer seasons—prized for mild white-pink flesh and relatively low mercury compared with larger tunas. It anchors American “white tuna” cans and excellent fresh loins for searing. Grill, sear, or flake quality canned fish into salads with restraint so the mildness shows. Pacific albacore troll fish iced at sea is a seasonal highlight from California to Washington. Avoid overcooking past medium; the lean-moderate meat dries.
