Belly
Fillet belly section is the lower, fattier edge of the albacore fillet. It renders and browns more than the loin, staying moist under high heat. Still leaner than bluefin belly, but clearly richer than centre-cut albacore. Grill or confit; slice thin for crudo if grade allows. Trim discoloured edges. Small yield per side makes it a cook’s treat rather than bulk meat.
