Red adzuki is the iconic deep-burgundy bean of anko, sekihan rice, and Chinese red bean buns—the colour most people picture. Skins hold for whole-bean dishes or break down for smooth pastes when cooked longer and sieved. Flavour is gently sweet even before sugar. Simmer until creamy-centred for paste; keep slightly firmer for salads and rice. Rinse; soak optional but speeds cooking. Default grocery adzuki colour. Waste less by matching cut size to Red Adzuki's natural Anko Standard; uneven pieces are the usual reason Anko disappoints.
